Chocolate Java Cake

For the Java Cake...

Ingredients

  • 2 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup sugar
  • 1 cup sour cream
  • ¾ cup canola oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla
  • ½ cup strongly brewed Westrock coffee - We recommend our Kivu Bold
  • ½ cup boiling water

 

Instructions

  1. Preheat oven to 350ºF
  2. Grease a baking dish, set aside
  3. Combine flour, cocoa powder, soda, baking powder, and salt in a medium bowl, set aside
  4. Combine sugar, sour cream, oil, eggs, and vanilla in a large bowl, whisk until smooth – The mixture should become light in color and in texture
  5. Add dry ingredients, stir with a flat dough whisk or large wooden spoon until combined
  6. Whisk in the boiling water and coffee until smooth - It is important not to overmix
  7. Pour cake batter into the greased pan
  8. Bake for 35 minutes
  9. Let cool before frosting

 

For the Chocolate Frosting...

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 tsp vanilla
  • ½ cup powdered sugar
  • dash of salt
  • 4 tbsp unsalted butter, softened and cubed
  • 1 cup sour cream

 

Instructions

  1. Melt all the chocolate chips in a double-boiler, or in a bowl resting on a pan filled with about 2” of simmering water
  2. Transfer melted chocolate to a stand mixer
  3. Add sour cream and vanilla
  4. Beat on medium until smooth
  5. Turn mixer off, add powdered sugar and salt
  6. Turn mixer on slow setting until combined
  7. Increase mixer speed to medium, add cubed butter, mix until smooth
  8. Increase mixer speed to high and beat until light
  9. Spread frosting over the cake once the cake has cooled
