Coffee Crepe Layer Cake

For the Mocha Whipped Cream...

Ingredients

  • 1 large can coconut cream (approximately 1 ½ cups), chilled overnight
  • 2 tbsp cocoa powder, more to garnish
  • 3 tbsp maple sugar, more to garnish
  • 2 tsp instant coffee
  • pinch of sea salt

 

Instructions

  1. Add cocoa, maple sugar, coffee, and salt into a mixing bowl, sift
  2. Using an electric mixer, slowly add coconut cream into the mixing bowl until stiff peaks form
  3. Cover, refrigerate until ready to assemble

 

For the Crepe Layer Cake...

 Ingredients

  • 1 can coconut milk
  • ¼ cup ground Westrock coffee - We recommend our East African Blend
  • 1 cup whole wheat flour
  • 3 organic eggs
  • pinch of sea salt
  • 1 tbsp refined coconut oil
  • 1 cup hazelnuts, toasted and chopped

 

Instructions

  1. Add coconut milk to a pan and stir in coffee, bring to a boil
  2. Transfer mixture to a bowl, place in freezer for 15 minutes
  3. Strain mixture through a fine mesh strainer
  4. Add infused coconut milk, flour, cracked eggs, and salt to a blender, process until smooth
  5. Refrigerate batter for 20 minutes - The consistency should be that of thin cream, add water as needed to thin
  6. Heat nonstick pan over medium heat and spread coconut oil
  7. Pour a few tablespoons of batter and swirl pan to spread into a thin layer
  8. Cook for 2 minutes or until edges start turning golden
  9. Use a spatula to flip crepe, cook for an additional minute
  10. Remove crepe from pan and repeat process with remainder of batter
  11. After crepes have completely cooled, spread about 2 tablespoons of cream on each layer along with a sprinkling of maple sugar, cocoa powder, and hazelnuts
  12. Stack layers to form a crepe cake, top last layer with cocoa powder and maple sugar
  13. Cut into slices and serve
